The CB Group, a reference in the restaurant sector in Mozambique, is recruiting a Sushi Chef to join the team at Casa dos Sabores, in Maputo. This is a unique opportunity for a senior professional who has mastered the art of Japanese cuisine and is ready to take on the technical leadership of a station from scratch, with total autonomy and responsibility.

What we expect from you

We are looking for a Sushiman seniorwith refined technique and proven experience in setting up or leading Japanese stations. It's not just about executing dishes: we expect you to make technical decisions without supervision, from defining the menu to choosing suppliers. If you have already led a Japanese kitchen team and know the quality and food safety standards, this position is for you.

Mission of the role

Technically lead and operate the Japanese culinary station at Casa dos Sabores. You will be responsible for defining the standard, creating the technical sheets, training the Assistants, establishing the network of fish and ingredient suppliers, and ensuring consistent quality and food safety from day one.

Main activities

  • Define the initial Japanese cuisine menu in coordination with the Casa dos Sabores Manager and the Chef — sushi, sashimi, hot dishes, combinations.

  • Create the technical sheets for each dish: weight, cut, ingredients, preparation method, presentation and price-cost.

  • Identify and propose suppliers of fish, seafood, seaweed, condiments and Japanese equipment; coordinate contracting with Purchasing.

  • Define the layout and equipment of the workstation — knives, boards, dedicated refrigerators, display counter.

  • Define the processes for receiving, storing and rotating sensitive products (fish, shellfish).

  • Establish the station's cleaning and hygiene routine (HACCP).

Requirements

  • Minimum 4 to 6 years as a Sushi Chef in a professional establishment.

  • Having technically led a Japanese station (not just executing dishes under the supervision of another Chef).

  • In-depth knowledge of HACCP standards for handling raw fish.

  • Good communication and team spirit.

  • Flexibility to work shifts.

  • Ability to work under pressure while maintaining quality.
